Eric Gurzell attended Michigan State University where he completed his bachelor’s degree in Nutritional Sciences in 2010 and his doctoral degree in Human Nutrition and a certificate in Epidemiology in 2014.

Eric’s doctoral work has largely focused on the immunological outcomes of dietary fish oils in mice, as means to better understand the potential health effects observed in humans. Eric has authored and co-authored research manuscripts in the Journal of Leukocyte Biology, Journal of Nutrition, and Prostaglandins, Leukotrienes, and Essential Fatty Acids. He is a member of the American Society of Nutrition and has previously served as an ad-hoc reviewer for Nutrition Research.

Eric’s interest in undergraduate education took root in Lyman Briggs College, a residential college for the sciences, at Michigan State University. There he served as a Teaching Assistant during his undergraduate and graduate programs within the biology classrooms and labs. In addition to traditional classroom teaching, Eric was awarded the Doctoral Study Abroad Fellowship, where he had the opportunity to travel with the “Food, Nutrition, and Health in Tanzania” study abroad program to better understand how to conduct successful education abroad programs.
