Laura McArthur, Professor

Dr. Laura McArthur has a B.A. in political science from Rice University in Houston, Texas, an M.A. in international studies from Johns Hopkins, an M.S. in food and nutrition from Texas Tech University, and a PhD in Nutrition from U.C. Davis.
Before coming to Western Illinois University, Dr. McArthur taught for ten years in the Environmental Studies Program at the University of Vermont, and for ten years in the Department of Nutrition and Dietetics at East Carolina University.
At Western Illinois University, Dr. McArthur has been teaching lower and an upper level nutrition science courses. Her research interests are in factors that influence consumer food choices, consumer compliance with dietary and physical activity recommendations, and weight management approaches.
