My Story After beginning my low-carb journey on September 6, 2003 I quickly realized how monotonous the low-carb way of eating could be… Even though my entire life I excelled at cooking and was always inclined to come up with new and interesting recipes, for some reason after I nixed the bread, pasta, potatoes, rice and sugar I quickly fell into a routine of boring food that left me on the brink of low-carb destruction. Fast-forward four or five months, and I soon realized I just couldn't live my life this way. Desperate and in dire need of inspiration, I hit the bookstore and began perusing the diet section for low-carb cookbooks that peaked my interest. This is when I came across Dana Carpender's "500 Low Carb Recipes." I quickly began making up new delights night after night and reignited my love for experimentation in the kitchen. It didn't take long to build up a repertoire of new recipes that not only kept my interest in low-carb peaked, but aided in my continuation to lose weight. To date I've lost 50 pounds and currently weight 140 pounds. I plan to lose another 5-10 but have hit a bit of a snag, so I'm doing what I can and increasing my exercise regimen to focus on toning my troublesome tummy, among other areas. I have a journal and food diary at a low-carb Web site, too. I can't recommend starting a journal and food diary enough! It keeps you motivated, keeps you on track and helps you pinpoint any potential problems in your diet and exercise routine. Although I have seen the low-carb light, there are many out there struggling with the same problems I had faced. For that reason, I began keeping a careful eye on the measurements of recipes I create so I can post them here for other low-carbers to enjoy. I hope you find some of these recipes inspirational, but please keep in mind that these are MY recipes. I have no problem with you printing them out and enjoying them, but please do no post them on any Web sites, blogs, recipe forums or take credit for recipes that are not yours. Thank you and enjoy!
